It all depends on internet availability and how much you want to depend on the cloud. I have a 5 year old 64gb iPad Pro and I’m finding the 64gb is not enough now as my habits/usage have changed over time. I’m also living in an area where mobile internet access is unreliable, so for me the cloud isn’t a dependable solution.
In regards to your question, I have been using a 64gb iPhone 8+ for 2.5 years, and have found that it's more than enough for me, and like you, I have lots of photos. The important thing to remember is to get what you can afford. That said- I will probably opt for a minimum of 128gb when I get a new iPhone later this year.
The 12 is $750 for 128gb, while the 11 is $550 for 128gb. Yeah the extra $200 isn’t worth a better display. The 11s display isn’t even that bad. I agree, sadly the iphone 11 has an LCD display which is dogshit compared to oled and definitely not appropriate for 2022.
